Cooking with Katie & Waffles

WAFFLES:  Mmmmm, chicken.

KATIE:  With a cilantro lime marinade, Waffles. Pretty sure you take your chicken sans marinade.

WAFFLES:  Mary who? What's she got to do with my chicken? I never said she could have any–

KATIE:  Marinade, Waffles. Glogirly's making one of her favorite recipes for her dinner tonight. The marinade is what she's soaking the chicken in.

WAFFLES:  Well I sure hope it doesn't drown. I don't think chicken can swim, you know.

KATIE: And I think you better get off the kitchen counter pronto, Waffles. Before Glogirly turns around and sees you hiding behind her computer.

WAFFLES:  So what else is in the recipe? Gravy??? I like gravy.

KATIE:  A strawberry tomato salsa, Waffles. With jalapenos, lime, and cilantro.

WAFFLES:  Aaaack! What's with all the lime and cilantro stuff??? I liked it better when Glogirly got her chicken from the colonel. But she says there's no colonel in the mountains. ...what a ripoff.

About Today's Photos
Glogirly's been trying to learn a couple of new recipes each month. There are winners and losers, but so far she's been faring pretty well. Her success rate is about 25%. For every four recipes, three are good and one's a loser. We're not sure though if that includes the recipe where she opens a pint of Ben & Jerry's and combines it with a spoon.

Tonight's dinner really had Waffles' attention. As soon as she opened the chicken, he was right there on his kitchen stool. But after the chicken had a chance to marinade for a half hour, he wasn't so sure about it anymore.

The recipe is called Cilantro Lime Chicken with Strawberry Salsa. Since Glogirly loves anything with strawberries, she decided to give it a whirl. The marinade is very simple - just a little lime, lime zest, olive oil, honey, and cilantro.

The salsa was equally easy with chopped strawberries, Campari tomatoes, jalapeno, lime, and cilantro.

The Verdict?
Glogirly thought the chicken was tasty. Kind of citrusy. You definitely have to be a fan of lime and cilantro to enjoy this dish. Needed some salt and fresh cracked pepper. The strawberry salsa was VERY yummy. It was even good on tortilla chips. The combination of the chicken and salsa needed a little something-something though, so she tossed some feta cheese crumbles on top and that was the ticket. Well, that was her ticket.

Katie and Waffles were just happy they didn't have to wait for Glogirly's recipe experimentation to conclude before they got their dinner.

P.S. About That Kitchen Towel
As a matter of fact, yes...that is Katie's likeness on the kitchen towel in the salsa photo! A dear friend made it for Glogirly as a gift using one of Katie's pictures. There's one with Waffles on it too.

  1. I think you have a 75% hit rate....
The hubby and I are in the cilantro tastes like soap group. But oddly I use coriander like mad in recipes. Goes to show one isn't like the other....heh

  2. That recipe made my human hungry! My human is one the fortunate ones who can taste cilantro the way it was meant to be tasted! And she loves it lots.

  3. That look from Katie in her second picture... reminds me of a look I used to use when I was a teenager. It lost some of its effectiveness when Sandy Cat started using it, too.

  4. Yes it’s. 75% success. Sounds and looks yummy!

  5. Mum does not care for cilantro and nor do we.She loves feta though :)
We like our chicken plain ;) Glad to hear Glogirly liked it though.

  6. If you have a watermelon salsa recipe, then count me in! Wait...just give me a watermelon, and I’ll be fine. Watermelon....yum....

  7. sounds like Glogirly is gaining all sorts of skills out there in the mountains

  8. The look on Waffles face in the first picture is priceless

  9. Heh, heh...we think a little cheese makes most recipes taste better!

  10. that looks delicious! I absolutely LOVE to cook! I mostly just use recipes as "road maps", I use them as ideas and then I like to improvise.....I adore cooking (and obviously I adore eating lol)

  11. Love Waffles' reaction to the "lime and cilantro stuff!" There's always experimenting going on around here and I get to sample (or not) - Tom

  12. Mum says the salt and pepper are easily added to adjust for each purrson's taste. Mum does not like jalapeno or any hot stuff, so don't think this is something she would like.

Mum says your math is off. If you do four and you like three, then your success rate is 75%. Not 25%. Failure rate is 25%. Mum is good at math, just so you know.

  13. Sorry, Waffles. Wish we could send you some KFC.

Thank you so much for your comment. We LOVE hearing from you!
