Baking Up Black Friday


WAFFLES:  Hey Boss? What's this thing?  Is it a hat? Like maybe a Thanksgiving hat?

KATIE:  Waffles, it's not a hat. It's the whip from Glogirly's mixer. Don't touch it.



WAFFLES:  Glogirly has a WHIP???  

KATIE:  What did I say about touching it? 

WAFFLES:  So what was Glogirly whipping?



KATIE:  Cupcakes. She was baking cupcakes for our party today. Our guests are arriving any minute now. 

WAFFLES:  Cupcakes? What kind of cupcakes?

KATIE:  Hummingbird cupcakes. 



WAFFLES:  HUMMINGBIRD cupcakes?  Like REAL hummingbirds?



KATIE:  Waffles, don't be ridiculous. Hummingbird cupcakes don't have real hummingbirds in them.  That would be crazy.  

WAFFLES:  I don't know. I don't think chicken cupcakes would be crazy. I'D eat a chicken cupcake. 

KATIE:  Waffles, there's no such thing as a chicken cupcake, a turkey cupcake or any kind of poultry cupcake. Cat's don't even EAT cupcakes. 




 WAFFLES:  So how did she get the hummingbirds inside these cupcakes???



Hummingbird Cupcakes
Hummingbird cake is an old southern recipe. Spicy and sweet... a little bit like carrot cake. Gloman likes his naked, but Glogirly usually tops them with a dollop of cream cheese frosting. She was still whipping up the frosting when she took this photo but rest assured, there's frosting in their future. 



makes 24 cupcakes
3 cups flour
2 cups sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 eggs
3/4 cup vegetable oil
1-1/2 tsp vanilla
1 8oz can crushed pineapple, with liquid
2 mashed bananas
1 cup coursely chopped pecans



1. Mix flour, sugar, baking soda, cinnamon, salt with a whisk in a good sized bowl.

2. Beat eggs.

3. Add oil and vanilla to beaten eggs and mix until somewhat combined.

4. Add egg/oil/vanilla mixture to flour/sugar/baking soda/cinnamon/salt mixture.

5. Mix together pineapple, bananas, pecans until combined.

6. Add to the rest of ingredients and stir to combine.

Bake at 350 degrees for ~25 minutes until golden and a cake tester comes out clean. 



Because everything's better with...
Cream Cheese Frosting
2 packages (8-ounces each) cream cheese, softened
1/2 cup (1 stick) unsalted butter, softened
l 1/2 teaspoons vanilla extract
5 to 6 cups confectioners' sugar 

1.  Sift confectioners' sugar ahead of time.

2. Beat cream cheese and butter. Add in vanilla.

3. Add in sugar a little bit at a time, beating with mixer on high.

4. YUM

  2. Taking a cue from me are you? Waffles' Baking Blog?
    I hope you had a great Thanksgiving. I spent all morning cooking: made the ice cream, made the lemon curd, made the pies,made the stuffing got the bird in the oven. Sat down for a few minutes to call my family. Got up and made the cranberry sauce, made the potatoes and the wild rice, fixed up the brussels sprouts, made the gravy. We ate in 15 minutes.

    *sigh*

  10. We always think of hummingbird cupcakes as a southern thing, like red velvet cake, but the head peep never has had a good recipe for them.

    It's kind of disappointing that there aren't any real hummingbirds in there, but that could get kind of messy. Glogirly's sound delicious!

  15. Just saved the recipe! I have lots of Southerners in my family tree - but I don't think they believed in dessert. I do. Waffles is so well-mannered. Julio would have knocked the whip on the floor, rolled it at Scarlett, and, then, jumped back up on the counter to stick his face in the batter. Could be worth it to se a black cat with pineapple chunks dripping off his black whiskers!

Katie..you should know that if you tell Waffles to not touch something..he will have to do it..mol..I lost my recipe for Hummingbird cake so thank you Glogirly for yours..I do believe I will be baking this weekend..Also..they say cats don't have taste buds for sweets..but I'm not so sure I can agree with that from what I see around here..

  21. Hummingbird Cupcakes sound delicious, especially with cream cheese frosting. Cream cheese frosting makes so many things better. Cats, though...cats make pretty much EVERYTHING better. Having a bad day? Add a cat, instant better day. Having a good nap? Add a cat, instant much better nap. Reading a good book? Put a cat on your lap and it's instantly it's a MUCH better reading experience. Watching tele is better with a cat. Writing a blog entry? Write it from the POV of a cat, and now you have an award-winning blog entry. ;)
